The principal aim of this encyclopedia is to provide a physicochemical
tool for interpreting various biological phenomena
in terms of a language of colloid and interface science. The
present book concentrates on subjects in the field of biocolloid
and biointerface science, since there are already excellent
encyclopedias on colloid and interface science available in
the literature. This field is the youngest—but is becoming a
very important—branch in the area in colloid and interface
science. Actually, however, colloid and interface science has
been closely related to biological science. Colloids, or more
specifically, colloidal particles with diameters ranging from
1 to 1000 nm, which are one of the major subjects in colloid
and interface science, can be found quite often in biological
systems as biocolloids such as biological cells. Surfactant
molecules, which are also one of the most important subjects
in colloid and interface science, adsorb at interfaces
between two immiscible media (e.g., water and oil), forming
micelles and vesicles, which are a prototype of living cells.
The Derjaguin–Landau–Verwey–Overbeek (DLVO) theory
explains well the stability of colloidal suspensions in terms of
the electrostatic and van der Waals interactions between the
particles. In their book Theory of Stability of Lyophobic Colloids,
Evert Verwey and Jan Overbeek, two of the founders
of DLVO theory, stated that an ordered structure formed
by tobacco mosaic viruses can be explained via DLVO
theory.
This encyclopedia consists of 71 topics, which are ordered
alphabetically. Each topic contains 1–4 review articles, so
that there are a total of 89 review articles.
